Noves, 54, is understood to have been knocked-out after his bicycle collided with a car in the city.
He was taken unconscious to hospital by helicopter and undergoing further examination though his injuries are not thought to be life-threatening.
Noves, who has guided Toulouse to three European titles, is now likely to miss his team's Heineken Cup quarter-final against Cardiff Blues tomorrow.
Cardiff coach Dai Young said: "Guy is a role model to any coach coming into the game. He keeps on being successful year after year which certainly isn't an easy task. He keeps producing quality teams and is the standard-bearer in club rugby coaching in Europe."
